- Passion fruit puree 30 grams
Tropical paste

- Step 1 – puree the mango puree, canned pear, sugar, passion fruit puree, and lemon juice with an immersion blender
- Step 2 – measure the weight of the saucepan (with ingredients)
- Step 3 – cook until the weight reduced by 80 grams – this gives 100 grams of tropical paste – you will need half of the amount for the cake, later.
Passion fruit paste
- Step 1 – cut the dried apricot into stripes & mix with the passion fruit puree
- Step 2 – wrap with plastic & heat in the microwave until the mixture boils
- Step 3 – set aside for 24 hours at the room temperature and do not unwrap the plastic
Passion fruit paste (next day)
- Step 1 – process the paste in the food processor to a thick puree
- Step 2 – this amount is enough for 2 cakes. Use a half of it for the cake and store the remaining passion fruit paste in your freezer
- Step 3 – grease the cake pan with butter
- Step 4 – cover the inside with flour
- Step 5 – put the cake pan in your fridge
Cake batter
- Step 1 – sift the flour together with the cornstarch & baking powder twice
- Step 2 – whip the (soft) butter until it turned almost white
- Step 3 – mix in the sugar & vanilla sugar
- Step 4 – clean the side of the bowl from time to time
- Step 5 – mix the egg in 2 steps
- Step 6 – mix well after each addition
- Step 7 – then mix in the almond powder & coconut flakes
- Step 8 – add the passion fruit paste (half amount) & the mango pieces (full amount)
- Step 9 – finally, use a spatula to mix in the sifted flour and cornstarch and baking powder
- Step 10 – spread the batter in the cake pan
- Step 11 – scrape away a line of batter in the center
- Step 12 – fill with the tropical paste
Coconut dacquoise
- Step 1 – sift the almond powder, icing sugar, and flour
- Step 2 – whip the egg white in a dry & clean bowl
- Step 3 – when the egg white turned foamy, add the sugar and then continue beating until you get a firm meringue
- Step 4 – mix in the sifted dry ingredients & the coconut flakes
- Step 5 – fill the dacquoise into a piping bag & cover the cake
- Step 6 – top with icing sugar & coconut flakes
- Step 7 – bake for 70 to 75 minutes in a pre-heated oven at 160-170°c – after baking, run a knife along the sides of the cake pan & carefully remove the cake
- Step 8 – let it cool down on a cake grid
- Step 9 – store the cake in an airtight container or you can wrap it in plastic in the fridge

11. Rich Chocolate Cake
Ingredients for a 26 cm diameter round cake pan (about 10 inches):
- Dark cuverture 400 grams
- 400 grams of butter
- 300 grams of sugar
- 300 grams of eggs
- 1 table spoon of flour
Directions:
- Step 1 – prepare the cake pan
- Step 2 – cover the bottom with a round sheet of baking paper
- Step 3 – chop the cuverture chocolate into small pieces

- Step 14 – pour the mixture into the prepared cake pan
- Step 15 – bake in your pre-heated oven for 30-35 minutes at 170°c
- Step 16 – after baking, let the cake cool down
- Step 17 – cut the chocolate cake into small pieces

What you need:
Make 40 madeleines
Ingredients:
- Butter (unsalted) 260g
- Egg 260 g
- Sugar 180g
- Honey 60g
- Orange zests from 2 oranges
- Flour 280g

- Step 1 – wash and grate the oranges to get fine orange zests
- Step 2 – melt the butter in a pot. Do not let the butter turn brown. Take away from the heat & let it cool down

- Step 4 – add sugar & honey. While constantly stirring, heat the mixture to 39°c, either directly on your stove or with a double boiler (metal bowl on a pot with boiling water)
- Step 5 – beat until you see the mixture turn into a sweet omlette
- Step 6 – take the mixture away from the heat & add the orange zests
- Step 7 – add the sifted flour & the baking powder
- Step 8 – gently mix until you get a smooth batter
- Step 9 – add the melted butter & slowly fold with a wire whisk until you see all the butter is incorporated
- Step 10 – generously butter the madeleine pan & use real butter for best taste and nice golden color
- Step 11 – on a sheet of baking paper, fill the moulds of the madeleine pan with flour & invert the pan on the baking paper
- Step 12 – fill the batter into a pastry bag and pipe it into the moulds of the madeleine pan
- Step 13 – bake in the preheated oven at 225°c for 10-12 minutes
- Step 14 – after baking, carefully remove the madeleines from the pan & let them cool on a wire rack

13. Applesauce Cake
Ingredients you will need to make this cake:
- 2 teaspoons of baking soda
- 3 cups of all-purpose flour, leveled and spooned
- 1 1/2 teaspoons of ground cinnamon
- 1 teaspoon of salt
- 1 cup of unsalted butter at the room temperature
- 1 1/4 teaspoons of ground cardamom
- 1/4 cup of honey
- 2 cups of packed light-brown sugar
- 2 cups of store-bought chunky applesauce or basic applesauce
- 2 large eggs
- Confectioners’ sugar, optional
- Nonstick cooking spray
Directions:
- Step 1 – you preheat an oven to 350 degrees f
- Step 2 – in a large bowl, you whisk together baking soda, flour, salt, cardamom and cinnamon.
- Step 3 – set aside
- Step 4 – in another bowl, you use an electric mixer, and then you beat brown sugar, butter, and honey until you see they are light and fluffy
- Step 5 – you add eggs, one at a time, and then beat until combined
- Step 6 – with mixer on the low speed, you gradually add flour mixture and beat just until they are combined
- Step 7 – beat in applesauce
- Step 8 – generously you coat a nonstick 9 in. Tube pan with the cooking spray
- Step 9 – spoon batter into the pan and smooth top
- Step 10 – bake about 50 to 60 minutes
- Step 11 – cool on a wire rack about 10 minutes
- Step 12 – turn out of the pan onto a baking sheet or cutting board and invert cake into rack, top side up
