28. Balsamic Ginger Steak Salad
Not surprisingly, this is also considered among the healthiest Paleo salad recipes.
Ingredients:
- 1 1/2 lbs of grass-fed ribeye
For vinaigrette:
- 1/3 cup of balsamic vinegar
- 2 garlic cloves
- 1 shallot, chopped
- 1 tablespoon of coconut aminos
- 1/3 cup of extra virgin olive oil
- 1/2 teaspoon of ginger
For marinade:
- 1/4 cup of balsamic vinegar
- 2 tablespoons of apple cider vinegar
- 1/4 cup of coconut aminos
- 1 shallot, minced
- 1 teaspoon of ginger, minced
- 3 garlic cloves, minced
- 1/4 teaspoon of pepper
- Ghee, for cooking
- 1/4 teaspoon of sea salt
Extras:
- 1 large carrot, shredded
- 1 head romaine, chopped
- 1 cup of grape tomatoes, and cut in half
- 1 cucumber, large diced
Process:
- For the steak: In bag, place all marinade ingredients and then add in steak.
- Massage and then let stay for 30 minutes to an hour at room temperature. After this meat is done marinating, over high heat, you heat large skillet.
- Add in some ghee and then sear quickly each side of these steaks.
- Reduce the heat to medium-low to end cooking.
- Leave meat to rest for around 8-10 minutes.
- For the vinaigrette: while this meat is resting, you combine all the vinaigrette ingredients in one blender. Mix until creamy.
- When meat is ready, you cut into some thin slices against the grain, and serve over chopped romaine with tomatoes, shredded carrots, and cucumber and one drizzle of dressing.

29. Arugula Salad Accompanying Zucchini Ribbons
Ingredients:
- 4 cups of arugula
- ½ lg zucchini
- ⅔ cup of pecan halves
- ⅓ cup of salted and roasted sunflower seeds
- 1 oz Parmesan, shaved
- 2 tablespoons of freshly grated orange zest
- 1 lemon, halved
- ¼ cup of extra virgin olive oil
Process:
- In large bowl, place arugula. Shave zucchini with the help of vegetable peeler to make ribbons. Then, top arugula with ribbons.
- Now sprinkle with sunflower seeds, pecans, and cheese. Then, squeeze lemon over salad.
- Sprinkle with zest and then drizzle with oil.
- Serve immediately.

30. Thai Turkey Salad
Ingredients:
For turkey:
- 2 tablespoons of coconut oil
- ½ lb ground turkey
- 4 tablespoons of fresh lime juice
- 2 tablespoons of tahini
- 1 tablespoon of rice vinegar
- 6-inch piece lemongrass, and thinly sliced into coins
- 1-inch piece fresh ginger, grated
- 1 clove garlic, grated
- Dash of cayenne (optional)
For salad:
- 2 cups of spinach, chopped
- 1 red bell pepper, and cut into matchsticks
- ¼ sm head of red cabbage, thinly sliced
- ¾ cup of snow peas
- 4 or 5 lg of thinly sliced fresh basil leaves, + sprigs for garnish
- ¼ cup of salted, roasted peanuts, and chopped
Process:
- Heatoil in a skillet over medium to high heat.
- Add turkey and then break up using wooden spatula.
- Add tahini, lime juice, vinegar, ginger, garlic, lemongrass, and cayenne (if using).
- Cook till no pink remains. Then, remove from the heat and cover.
- Layerspinach, cabbage, bell pepper, and snow peas on 2 plates.
- Stir basil into the turkey mixture. After that, divide into 2 portions and now top each salad.
- Top with the peanuts, garnish with the basil sprigs, and then dress with a vinaigrette.
