  1. Preheat your oven to 190°C. Line with paper cases or butter a muffin tin.
  2. For the sponge: You separate the eggs. Next beat these egg yolks with two tablespoons water and sugar till foamy. Mix flour with baking powder and corn flour and mix into this egg yolk mixture. Beat these egg whites till stiff and then fold them in too.
  3. Evenly pour the batter into one muffin tin and then smooth out. Now bake for around 15-20 minutes in your preheated oven. Let cool and afterwards cut one lid out of these domed tops.
  4. For the filling: You mix this lime jelly mix with 250ml boiling water and 100g sugar. Leave in the fridge till half-set. Beat this cream and then fold it in to that jelly. Leave to stay a little bit longer and then pour into one piping bag. Now squirt this mixture onto the bottom half of these muffins.
  5. Make one glaze out of the green food coloring, icing sugar, melted butter and water, and cover the tops of these cooled muffins with it. Put tops askew on the top of this lime jelly cream and put marshmallows as eyes into your still wet glaze. You can also get creative with the black icing and green decorating sugar to make the pupils, smiling mouths and irises.
